Take the butter out of the fridge an hour before planning to cook, so that it will be nice and soft when you need it 🙂

With the mixer soften the butter and add the sugar, make sure it becomes creamy looking.

Add the egg and keep on mixing

Add the lemon peel, the lemon juice and the ginger.

Then gently add the sifted flour and the yeast.

Now make a nice ball out of this soft dough and leave it in the fridge for an hour to harden a bit.

Once the dough has hardened a bit make some small balls (22 g each) , all of them having more or less the same shape.

Roll them into the granulated sugar and then in the icing sugar to cover them completely.

Put them in the baking tin making sure they don’t touch.
